Slow Roast Lamb Shoulder

  • 1 tsp black pepper
  • 8 medium onions, chopped

  • 3 garlic cloves, cut into slivers
  • 8 to 10 sprigs rosemary
  • 125 ml balsamic vinegar
  • 250 ml red wine
  • 250 ml port
  • 250 ml lamb or beef stock
  • Optional: 2 sprigs of fresh thyme
  • Optional: 2 bay leaves

  • 2 tbsp flour
