Trish’s Nut n’ Honey Granola
Yummy Gluten Free Granola! We like ours baked until it has a combination of crispy and chewy pieces. Great for adding to the top of yogurt, on top of fruit, or alone as a quick snack.

Ingredients

  • 5 Cups Gluten Free Old Fashioned Rolled Oats
  • 1 cup Slivered Almonds (raw)
  • 1 cup Chopped Pecans (raw)
  • 1 cup Chopped Walnuts (raw)
  • 1-¼ cup Bob’s Red Mill Unsweetened Coconut Flakes
  • ½ teaspoon Coarse Sea/Kosher Salt

  • 1 cup Raw Honey
  • ¼ cup melted Coconut Oil or Canola
  • 1-½ Tablespoon Real Vanilla Paste
Steps
  1. Preheat oven to 275° F (use Convection if an option) with rack in the center.
  2. Line a large baking pan (we use a 20x14x3 foil pan) lined with parchment paper, or an easier option is to line with a Silpat large enough to come up the sides.
  3. In an extra large mixing bowl, combine and stir the dry ingredients until they appear evenly distributed.
  4. In a separate bowl or in a blender, combine wet ingredients and blend using immersion blender or regular blender until emulsified.
  5. Pour ½ of the emulsified liquid onto the oat and nut mixture and stir thoroughly.
  6. Pour the remaining liquid over the oat and nut mixture and stir until all pieces are coated.
  7. Pour the oat mixture into the lined baking pan and spread evenly, but do not press down.
  8. Place, uncovered, into the preheated oven and bake for 25 minutes.
  9. After 25 minutes, remove from oven, stir thoroughly, and place back into the oven for another 25 minutes.
  10. After the second 25 minutes, stir again and if golden brown, remove from oven to cool.
  11. If not done to your liking, check and store every 10 minutes until done.
  12. Let the granola cool completely, and break apart into bite size pieces and place in an airtight container and store at room temperature for up to 3 weeks.
Notes
  • We prefer hearty rolled oats like Bob’s Red Mill Extra Thick or One Degree Organic Sprouted (available at Costco). Quaker Oats just don’t make good granola!
  • If you use a larger pan resulting in a thinner layer of granola bake times may be reduced, so check your granola before the 25-minute mark.
