Cinnamon Oatmeal Cookies (Vegan Oil-Free Option)
Ingredients
  • 2 cups old fashioned oats
  • 1 cup whole wheat flour - or all-purpose flour or gluten-free flour
  • 3 tsp cinnamon - I used Ceylon cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • pinch of salt
  • ½ cup maple syrup
  • ⅓ cup coconut oil - melted, see notes for oil-free recipe
  • ⅓ cup plant-based milk - unsweetened and unflavored
  • ¼ cup apple sauce - unsweetened
