Southwest Quinoa Salad {Gluten-Free, Dairy-Free Option}
Ingredients
  • 1 cup quinoa, I like I Heart Keenwah tri-colored
  • 1 avocado, ripe, but firm and diced
  • 1 cup canned black beans, , drained and rinsed
  • 1 cup  canned corn, , drained
  • 1 cup grape tomatoes, quartered
  • 1 cup mozzarella cheese (I used cheese sticks), ,dairy-free leave out
  • ½ cup chopped cilantro
  • 4 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 tablespoon cumin
