  • ½ large sweet onions sliced
  • 1 large stalk celery ½ inch slices
  • 4 cups beef broth
  • 1 cup red wine pinot noir, cabernet, or merlot
  • 1 bay leaf
  • 1 to 2 sprig fresh thyme or 1 tsp dried thyme
  • ½ tsp smoked paprika
  • 1 tbsp corn starch more if needed
