Tammy Harper (coworker): My husband stumbled upon this recipe several years ago and it has become a family Winter favorite when all of our kiddos are home.
Ingredients
  • 2 lbs ground beef
  • 1 onion, diced
  • 1 (10 oz) can Rotel
  • 2 cans (15 oz each) pinto beans
  • 1 can (15 oz) kidney beans
  • 2 cans (14.5 oz or 15 oz each) diced tomatoes
  • 2 cans regular corn -OR- 1 20-oz. frozen corn (I do not use this much…maybe half as much)
  • 1 (8 oz) can of tomato sauce
  • ½ cup water
  • 1 pkg taco seasoning
  • 1 pkg dry ranch dressing mix
  • subheading: Toppings and Bottoms:
  • Package of Fritos
  • shredded cheese
  • black olives
  • diced onion
  • sour cream
Steps
  1. Brown the ground beef and add onion while browning. Drain grease off.
  2. Don’t drain any of the cans.
  3. Pour all into a crock pot and cook for 6 hours on high.
  4. Serve over Fritos.
  5. Optional: add sour cream and/or black olives on top.
Notes
  • I’ve also served with homemade cornbread instead of Fritos.
