Nancy Young's Marinated Veggie Salad

Ingredients
- subheading: For Marinade:
- ¾ cup vinegar
- ½ cup vegetable oil
- 1 tsp salt
- 1 tsp pepper
- 1 Tbs water
- 1 cup (or less) sugar... Use less
- subheading: For Salad:
- 1 16 oz. can French-style green beans, drained
- 1 17 oz. can English peas, drained
- 1 12 oz. can Shoe peg corn, drained
- 1 2 oz. jar of chopped pimentos, drained
- 1 cup celery, chopped
- 1 red bell pepper, chopped
- 1 bunch green onions, chopped
Steps
- Combine marinade ingredients in small sauce pan, bring to a boil until sugar is dissolved. Let cool.
- Combine all other ingredients in plastic bowl and add marinade. Stir well.
- Cover and refrigerate for 12 hours, stirring occasionally.
Notes
- Halved cherry or grape tomatoes can be substituted for the pimentos.
