Nancy Young's Marinated Veggie Salad
Ingredients
  • subheading: For Marinade:
  • ¾ cup vinegar
  • ½ cup vegetable oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbs water
  • 1 cup (or less) sugar... Use less
  •  
  • subheading: For Salad:
  • 1 16 oz. can French-style green beans, drained
  • 1 17 oz. can English peas, drained
  • 1 12 oz. can Shoe peg corn, drained
  • 1 2 oz. jar of chopped pimentos, drained
  • 1 cup celery, chopped
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
Steps
  1. Combine marinade ingredients in small sauce pan, bring to a boil until sugar is dissolved. Let cool.
  2. Combine all other ingredients in plastic bowl and add marinade. Stir well.
  3. Cover and refrigerate for 12 hours, stirring occasionally.
Notes
  • Halved cherry or grape tomatoes can be substituted for the pimentos.
