  • 2.5kg beef bones (e.g. short ribs, knuckle bones or oxtail)

  • 5 cloves
  • 1 cinnamon stick
  • 1 tbsp sugar
  • ⅓ cup fish sauce or to taste
  • 2 tbsp sea salt or to taste
