Keto Steak Fajita Bowls
with Cilantro Lime Cauliflower Rice

Ingredients
  • 1 to 2 pounds Skirt Steak
  • 3 Bell Peppers (different colors) cut into strips - I used green, red and yellow this time
  • 1 tbsp Olive Oil
  • ½ tsp minced garlic
  • ½ medium onion, sliced
  • 1 Lime
  • ¼ cup fresh Cilantro, chopped - divided
  • 1 Bag frozen Cauliflower Rice (I use Birds Eye Roasted Garlic)
  • Guacamole
  • Salsa
  • Sour Cream
  • Salt & Pepper to taste
  • 2 dashes dried minced onion
  • ½ tsp Ground cumin, divided
Steps
  1. Cook your skirt steak to your liking.
  2. You can grill it or sear it off in a hot cast iron skillet.
  3. I chose to grill it this time. I have also cooked it on a flat top griddle. I seasoned with salt, pepper, cumin, ancho chili powder, smoked paprika and a little lime juice.
  4. Slice it after you have given it a few minutes to rest
  5. Put the bag of cauliflower rice in the microwave, according to bag directions.
  6. While that is cooking slice the onion and bell pepper & chop the cilantro.
  7. Cut the lime in half.
  8. When the cauliflower rice is finished heat a cast iron skillet on medium heat.
  9. Add the garlic to the skillet and heat for a few seconds. Pour the cauliflower rice from the bag to the skillet.
  10. Add the dried minced onion, salt & pepper to taste and ½ of the cumin. Squeeze the juice of ½ of the lime into the rice. Cook the rice until all of the liquid is cooked out. In the last few minutes add half of the chopped cilantro. This process will take several minutes.
  11. When the rice is finished, remove for the skillet.
  12. Add the olive oil and heat. Add the bell peppers, onion, salt & pepper & the rest of the cumin.
  13. Cook until peppers are cooked to your liking. I like mine a little crunchy, so it took about 5-ish minutes.
  14. When that is finished, build your bowl. Add the cilantro lime cauliflower rice, meat, peppers, onions and top with guacamole, salsa, sour cream, cilantro and a slice of lime.
