Maple-Soy Pork Chops with Shichimi Togarashi

  • 4 bone-in (½-inch-thick) pork chops

  • 2 teaspoons soy sauce

  • Neutral oil, such as canola or grapeseed
  • 2 tablespoons cold unsalted butter
