Sausage and Leek Stuffing
Ingredients
  • 1 (1-pound) loaf day-old white Pullman bread, crusts removed, cut into ½-inch cubes (12 cups)
  • 8 tablespoons unsalted butter
  • 1 pound sweet Italian sausage, casings removed
  • 4 celery ribs, chopped
  • 2 medium leeks, white and light green parts halved lengthwise, chopped and thoroughly rinsed
  • 1 medium yellow onion, chopped
  • ¼ cup finely chopped fresh sage leaves
  • Salt and freshly ground black pepper
  • ½ cup heavy cream
  • 2 large eggs, beaten
  • 3 cups chicken or turkey stock, preferably homemade
