One-Pot Mediterranean Lemon Chicken & Rice
Ingredients
  • 3 tbsp avocado oil, divided
  • 3 cloves garlic, chopped
  • 2 tsp dried oregano, divided
  • ¼ tsp each sea salt and ground black pepper
  • 5 4-oz boneless, skinless chicken thighs
  • 1 small yellow onion, chopped
  • ¾ cup sprouted rice blend (red, brown and black) or brown rice
  • 1½ cups low-sodium chicken stock or bone broth
  • 1 lemon, zested and juiced, divided (NOTE: Use additional wedges for garnish.)
  • ½ cup Kalamata olives
  • 1 14-oz BPA-free can artichoke hearts, halved
  • 2 cups baby kale (or regular kale, stems removed and chopped)
