Maple Pecan Sauce - Gluten Free
A nice topping for cakes instead of icing. Not as rich as regular pecan sauce for ice cream etc.
Ingredients
  • 2 medium eggs
  • 2½ Tbs avocado oil
  • ¼ cup packed brown sugar
  • ½ Tbs corn starch
  • 1 tsp vanilla extract
  • ¼ tsp kosher salt
  • ½ cup pure maple syrup
  • 1 cup pecans (whole or pieces)
Steps
  1. In a medium bowl, whisk eggs well.
  2. Add the oil, sugar, cornstarch, vanilla and salt to combine. Add the maple syrup and whisk to combine.
  3. Cook in microwave for 2 minutes stirring every 30 seconds. Add the pecans and cook for another 1 to 2 minutes stirring once or twice.
  4. Cool completely and spoon over cake or brownies.
