Turkey & Wild Rice Soup with Vegetables

  • 8 ounces cremini or white button mushrooms, chopped (3 cups)
  • ¾ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 tablespoons all-purpose flour
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 1 cup wild rice
  • 1 cup chopped green beans
  • 2 ½ cups shredded cooked turkey or chicken (about 10 oz.)
  • 2 cups whole milk
  • 1 tablespoon lemon juice
  • 2 teaspoons chopped fresh thyme or ½ tsp. dried
