Ingredients
  • 2 medium zucchini, spiralized
  • Juice of 1 lime
  • 1tbsp balsamic vinegar
  • 1 garlic clove, smashed
  • Handful of herbs: parsley, chives or basil, finely chopped
  • ½ red onion, diced
  • ½ red pepper, diced
  • ½ mango, diced
  • ½ avocado, diced
  • 1 tomato, diced
  • ½ jalapeno, deseeded and finely diced
  • Cilantro for garnish
  • (Salt and pepper)
Steps
  1. Combine the lime juice, balsamic vinegar, garlic and chopped herbs in a salad bowl.
  2. Add the chopped veggies and mango to the bowl and combine with the dressing.
  3. Make zucchini noodles with a spiralizer or a vegetable peeler.
  4. Top the noodles with salsa and garnish with cilantro
