Easy Plant-Based Veggie Fajitas
Ingredients
  • Juice from 2 limes
  • 2 to 4 Tablespoons of oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried cumin
  • ½ teaspoon of chili powder
  • ¼ cup of fresh cilantro chopped
  • Salt and pepper to taste
  • 1 large onion cut into wedges
  • 2 bell peppers cut into strips (any color)
  • 2 small zucchinis halved and cut into strips
  • 4 garlic cloves missed
  • 1 jalapeño cut into thin strips
  • 1 tomato cut into wedges
  • 8 to 12 flour tortillas fajita style
