Portugese Almond Pie
Ingredients
  • Dough
  • 1¾ plain flour
  • ½ cup grated almonds
  • ⅓ cup icing sugar
  • 175 gm chilled butter, chopped
  • 2 egg yolks
  • 2 tbsp iced water
  •  
  • Almond filling
  • 5eggs lightly beaten
  • ½ cup sugar
  • 1 cup creme
  • 1 tbsp zest
  • ½ cup lemon juice
  • 1 cup grated almonds
Steps
  1. mix flour, almonds icing sugar and butter till mixture resembles breadcrumbs. add yolks and water process till dough cones together. Make a ball, chill 30 minutes.
  2. Preheat oven to 200, grease a 4/24 cm round tin base cover with parchement.
  3. Roll dough to 3 cm place in pan weigh down with beans.
  4. Bake 10 min cool, remove beans... reduce oven to 180.
  5. Mix almond filling and let stand for 6 minutes.
  6. Piur mixture into pastry encasing and bake for 25 to 30 min.... cool for 30 min. sprinkle with grated almonds and cinnamon... serve with ice cream.
