Sweet Potato, Poblano, and Black Bean Tacos
Ingredients
  • ½ cup red wine vinegar
  • ½ teaspoon red pepper flakes
  • 1 red onion, halved and sliced thin

  • 3 garlic cloves, minced
  • 1½ teaspoons ground cumin
  • 1½ teaspoons ground coriander
  • 1 teaspoon minced fresh oregano or ¼ teaspoon dried
  • Salt and pepper
  • 1 pound sweet potatoes, peeled and cut into ½-inch pieces
  • 4 poblano chiles, stemmed, seeded, and cut into ½-inch-wide strips
  • 1 (15-ounce) can no-salt added black bean, rinsed
  • ¼ cup chopped fresh cilantro
  • 12 (6-inch) corn tortillas, warmed
  • 1 avocado, halved, pitted, and cut into ½-inch pieces
