Chickpea Salad with Quinoa

Ingredients
  • ½ cup quinoa
  • ¾ cups chickpeas, cooked (~½ can)
  • 1 handful salad mix (spinach, arugula, etc.)
  • 3 oz low fat feta cheese (or use regular if you prefer)
  • 1 small handful raisins
  • subheading: Dressing:
  • 1 tbsp olive oil
  • 2 tbsp lemon juice (white or malt vinegar is also good)
  • 1 tsp honey
  • 2 tbsp water
  • ½ tsp cumin, ground
  • Salt and pepper to taste
  • ¼ tsp chili flakes (or dried cayenne pepper will do the trick nicely)
