Ingredients
  • 1 ½ cups lettuce ( Iceberg, Spring Mix, Romaine )
  • 2 slices bacon, diced  ( equivalent to 2 points for 2 slices of center cut, turkey bacon, chicken bacon or or Hormel precooked bacon) I use Sam’s club Hormel precooked bacon
  • 2 hard boiled eggs, diced
  • ¼ cup cheese (light pepper jack, mozzarella, Monterey, blue cheese, Roquefort cheese, or light cheddar) I use Trader Joe’s lite 3 cheese blend
  • 1 cup grilled or rotisserie chicken, diced
  • 1 oz. avocado, diced
  • 2 Tbsp croutons, optional topping ( I use New York Texas Toast Croutons)
  • 2 Tbsp dressing of your choice ( I use my Easy Skinny Ranch Dressing)
