Farmhouse Chicken Chowder with Corn, Poblano Chile, and Cilantro
Ingredients
  • 4 ounces (about 4 slices) bacon, chopped medium
  • 1 medium onion, minced
  • 3 medium garlic cloves, minced or pressed through a garlic press (about 1 tablespoon)
  • 1 teaspoon minced fresh thyme leaves or ¼ teaspoon dried
  • ⅓ cup unbleached all-purpose flour
  • 8 cups Simple Chicken Broth with Shredded Breast Meat (see related recipe)
  • 2 pounds Yukon Gold potatoes (about 4 medium), peeled and cut into ½-inch pieces
  • 1 carrot, peeled and sliced ¼ inch thick
  • 1 poblano chile stemmed, seeded, and chopped medium
  • 1 ear corn, husk and silk removed, kernels cut from the cub
  • 1 cup heavy cream
  • 2 tablespoons minced fresh cilantro
  • Salt and ground black pepper
