Carrot Lox (vegan)

Ingredients
  • subheading: RECIPE (4 servings, 1h prep time):
  • 3 carrots, washed
  • Drizzle with oil and salt.
  • Bake at 180C/350F for 45mins.
  • Optionally remove the skin and cut into thin slices.
  •  
  • 2 Tbsp oil
  • juice of 1 lemon
  • 2 Tbsp white wine vinegar
  • salt to taste
  • 1 Tsp smoked paprika
  •  
  • Carefully combine everything and refrigerate for a couple of hours or overnight.
  • They’ll last in the fridge 3 to 4 days.
