Chris Baber Satay-Style Chicken Curry
Ingredients
  • 2 tbsp vegetable oil
  • 4 skinless chicken breasts, cut into 2cm pieces
  • 2 garlic cloves, finely chopped
  • 3cm piece of fresh ginger, peeled and finely chopped
  • 1 red chilli, finely chopped
  • 2 onions, roughly chopped
  • 1 green pepper, roughly chopped
  • 1 red pepper, roughly chopped
  • 225g can water chestnuts, drained (optional)
  • juice of 1 lime
  • 1 small bunch of coriander, chopped
  • Jasmine rice, to serve
  • subheading: For the sauce:
  • 2 x 400ml cans coconut milk
  • 4 tbsp smooth peanut butter
  • 4 tbsp honey
  • 2 tbsp medium curry powder
  • 2 tsp ground turmeric
  • 3 tbsp dark soy sauce
