Ingredients
  • ½ cup chopped onion
  • ½ cup diced celery
  • 1 garlic clove, minced
  • 1 tablespoon plant-based butter*
  • ½ cup salsa
  • ½ cup ketchup
  • 2 tablespoons brown sugar**
  • 2 tablespoons cider vinegar
  • 1 tablespoon Worcestershire sauce***
  • ½ teaspoon chili powder
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 2 cups shredded soaked soy curls
  • 4 to 6 hamburger buns, split and toasted
Steps
  1. Boil water and soak soy curls for 10 minutes (see notes below****) and then strain and squeeze out any extra water. Set aside.
  2. In a saucepan, saute the onion, celery for about 4 minutes. Add the garlic and saute for a minute longer. Add the salsa, ketchup, brown sugar, vinegar, Worcestershire sauce, chili powder, salt and pepper and stir.
  3. Add the rehydrated soy curls and bring to a boil. Reduce heat; cover and simmer for 15 minutes.
  4. Share amongst the buns and enjoy!

  • * I use "Country Crock Plant-based Butter sticks"
  • ** I use "Wholesome Sweeteners Organic Light Brown Sugar"
  • *** I use "O Organics"
  • **** I don't like to put the dry soy curls in the sauce because it just sucks up too much of it and it all becomes one flavor. I like to actually reconstitute them in a little salted sugar water. Just a little, but it adds a lot.
