Ingredients
  • 1.5 lb Salmon fillet, cut into cubes approximately 1-inch to 1-½ inch or so in size
  • 1 zucchini, sliced into rounds
  • 1 small red onion, cut into squares
  • Kosher salt and pepper
  • subheading: For Marinade:
  • ¼ cup to ⅓ cup Extra Virgin Olive Oil (I used Early Harvest Greek olive oil)
  • 1 lemon, zested and juiced
  • 3 garlic cloves, minced
  • 2 tsp chopped fresh thyme leaves
  • 2 tsp dry oregano
  • 1 tsp ground cumin
  • 1 tsp mild chili pepper (I used this Aleppo pepper )
  • ½ tsp ground coriander
