Parsnip & Pear Fritters
Ingredients
  • 250 g parsnips, peeled and coarsely grated
  • 2 pears, 1 peeled and grated, 1 unpeeled, quartered and sliced
  • 100 g floury potatoes, such as Maris Piper, peeled and coarsely grated
  • 50 g echalion shallots, thinly sliced
  • ½ tsp fine sea salt
  • 1 egg
  • 40 g plain flour
  • ½ tsp baking powder
  • ¼ x 25 g pack basil, leaves chopped
  • 300 ml sunflower or vegetable oil, for frying
  • soured cream, to serve (optional)
