Sparkling Cranberry-Ginger Panna Cotta
  • 1 ¾ cups ginger beer or ginger ale
  • 3 envelopes unflavored gelatin
  • ⅓ cup water
  • ⅓ cup sugar
  • 1 cup fresh or frozen cranberries
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon lime zest
  • ¼ cup cold water
  • 1 ¾ cups heavy cream
  • ¼ cup sugar
  • 1 cup plain Greek yogurt
  • 1 vanilla bean, halved lengthwise and seeds scraped out; 1 teaspoon vanilla bean paste; or 1 teaspoon vanilla extract
  • Sugared cranberries and/or mint leaves (optional)
