Instant Pot Colcannon

2½ lbs Yukon Gold potatoes

1¼ lbs finely shredded green cabbage

2 TBS Butter

½ tsp pink salt

1 tsp chicken broth paste

½ cup water

⅓ to ½ cup heavy whipping cream

Peel the potatoes & thin slice the cabbage.

Set the Instant Pot to Sauté. Meanwhile, cut the potatoes into 1 to 1½ inch cubes.

Melt the butter in the pot & sauté the cabbage until it wilts.

Turn pot off. Sprinkle with salt. Add potatoes, chicken flavor & water.

Seal the lid. Set the pot on high pressure for 5 min. Do quick release when it’s done.

Add the cream. Mash the potatoes by hand & stir to mix.

Salt & pepper to taste.
