Instant Pot Colcannon
Ingredients
  • 2½ lbs Yukon Gold potatoes
  • 1¼ lbs finely shredded green cabbage
  • 2 TBS Butter
  • ½ tsp pink salt
  • 1 tsp chicken broth paste
  • ½ cup water
  • ⅓ to ½ cup heavy whipping cream
Steps
  1. Peel the potatoes & thin slice the cabbage.
  2. Set the Instant Pot to Sauté. Meanwhile, cut the potatoes into 1 to 1½ inch cubes.
  3. Melt the butter in the pot & sauté the cabbage until it wilts.
  4. Turn pot off. Sprinkle with salt. Add potatoes, chicken flavor & water.
  5. Seal the lid. Set the pot on high pressure for 5 min. Do quick release when it’s done.
  6. Add the cream. Mash the potatoes by hand & stir to mix.
  7. Salt & pepper to taste.
