Instant Pot Chicken Parm Soup

Ingredients
  • 2 tablespoons oil
  • 1 medium onion, diced
  • 1 lb boneless chicken breast, cut into chunks and seasoned with salt and pepper
  • 3 cloves garlic, minced
  • 1 small can tomato paste
  • 2 cups fresh tomatoes or a 15 ounce can diced tomatoes
  • 6 cups chicken broth
  • 8 ounces penne pasta
  • ½ tsp crushed red pepper flakes (more if you want it more spicy)
  • ½ tsp dried basil
  • ½ tsp parsley flakes
  • shredded mozzarella and/or shredded parmesan cheese
Steps
  1. Heat oil using saute, then add the onion and chicken and brown til no longer pink.
  2. Add the garlic and saute another minute, and then hit the cancel button.
  3. Add in other ingredients except cheese, stir well and lock the lid and turn valve to sealing position.
  4. Cook 4 minutes on manual (high pressure). Do a quick release and open once the pin drops.
  5. Add salt and pepper if desired, and serve with shredded cheese on top.
