Rich Roll Cookies
Ingredients
  • 1 cup butter (unsalted)
  • ⅔ cup sugar
  • 1 egg
  • 1 teaspoon vanilla or almond extract
  • 2 ½ cups sifted all purpose flour
  • ½ teaspoon salt (less or omit if using salted butter)
  • Optional: ½ teaspoon lemon zest, or 1 tablespoon cinnamon, or 2 tablespoons poppy seeds
Steps
  1. Cream together butter and sugar.
  2. Beat in egg and vanilla extract.
  3. Combine flour salt and optional ingredients, then add them to the butter mixture.
  4. Chill dough 2 to 3 hours or overnight before rolling. At this stage, the dough can also be wrapped tightly in plastic wrap and frozen, allowing to thaw overnight in the fridge before rolling or shaping.
  5. Bake at 350°F on non-stick, greased, or lined cookie sheet for 8 to 10 minutes or until the dough just starts to golden.
Notes
  • Add extra flour, tablespoon at a time, to create a wonderful sweet pie crust base.
