Mushroom, Spinach And Artichoke filling for Popovers
Ingredients
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 8 oz Crenimi Mushrooms, chopped
  • 1 (10 oz) bag baby spinach leaves, chopped
  • 1 (8 oz) package cream cheese
  • 1 ½ cups shredded mozzarella cheese
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 1 ½ tsp Thyme
  • 2 tsp Nutritional Yeast
  • ½ tsp salt
  • ½ tsp pepper
  • 3 green onions, sliced (Optional)
  • Salt and pepper, to taste
Steps
  1. Heat the oil in a large pot over medium-high heat.
  2. Add in the mushrooms and artichoke pieces, cooking for one minute.
  3. Add the Garlic powder, Onion powder, Thyme, Nutritional Yeast, and salt and pepper.
  4. Reduce heat to medium, add in the spinach, and cook until wilted, turning often.
  5. Mix in the cream cheese and mozzarella, and let it melt entirely.
  6. Fold in the green onions and season with salt and pepper to taste. (If using)
  7. Remove from heat.
