Mushroom, Spinach And Artichoke filling for Popovers

Ingredients
- 1 (14 oz) can artichoke hearts, drained and chopped
- 8 oz Crenimi Mushrooms, chopped
- 1 (10 oz) bag baby spinach leaves, chopped
- 1 (8 oz) package cream cheese
- 1 ½ cups shredded mozzarella cheese
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- 1 ½ tsp Thyme
- 2 tsp Nutritional Yeast
- ½ tsp salt
- ½ tsp pepper
- 3 green onions, sliced (Optional)
- Salt and pepper, to taste
Steps
- Heat the oil in a large pot over medium-high heat.
- Add in the mushrooms and artichoke pieces, cooking for one minute.
- Add the Garlic powder, Onion powder, Thyme, Nutritional Yeast, and salt and pepper.
- Reduce heat to medium, add in the spinach, and cook until wilted, turning often.
- Mix in the cream cheese and mozzarella, and let it melt entirely.
- Fold in the green onions and season with salt and pepper to taste. (If using)
- Remove from heat.
