Korean BBQ Pizza
Ingredients
  • Sprouted ­grain or whole wheat pita bread
  • Mozzarella ­Style Cheese Sauce, warmed (directions below)
  • Korean BBQ Sauced Mushrooms & Onions (recipe below)
  • Pickled Veggies
  • Cilantro, minced
  •  
  • subheading: For the Korean BBQ Sauced Mushrooms & Onions:
  • 2 Medjool dates, pitted and soaked in hot water for 10 minutes
  • ⅓ cup water (80ml)
  • ⅓ cup soy sauce (80ml)
  • 1 tablespoon 100% pure maple syrup
  • ½ tablespoon arrowroot powder / flour
  • 1 garlic clove, peeled and left whole
  • ½ teaspoon chopped fresh ginger
  • ¼ teaspoon hot sauce
  • ⅛ teaspoon dried red chili flakes
  • 7 cups sliced mushrooms (440g)
  • 1 cup thinly­sliced red onion (130g)
Steps
  1. Preheat the broiler in your oven.
  2. Drain the dates and discard the soaking water. Place the dates in your blender, along with the
  3. water, soy sauce, maple syrup, arrowroot, garlic, ginger, hot sauce and dried red chili flakes
  4. and blend until smooth. Set aside for now.
  5. Heat a large skillet over medium heat for 2 minutes. Add the mushrooms and onions and
  6. saute for 6 minutes, stirring often and adding a splash of water if they stick.
  7. Add the Sauce mixture from the blender and simmer for 4 ­ 5 minutes, stirring often, until the
  8. sauce has thickened and the mushrooms are tender.
  9. subheading: Mozzarella­ Style Cheese Sauce:
  10. Reheat the Cheese Sauce in a saucepan over medium ­low heat, stirring often until it becomes
  11. soft and gooey. If, after about 5 minutes of heating, you feel the cheese is still too thick, you
  12. can add a teaspoon of water at a time, stirring well in between, until you reach the desired
  13. thickness.
  14. subheading: To assemble your pizza:
  15. Grab a pita and smear some Mozzarella­ Style Cheese Sauce all over it. Top it with some BBQ
  16. Sauced Mushrooms & Onions and transfer to a baking sheet. Pop it in the oven and broil for
  17. about 2 minutes, until the edges are toasty and the cheese sauce is nice and hot..
  18. Remove your pizza from the oven and serve with Pickled Veggies and fresh cilantro on top.
Notes
  • For a crispier crust, place the pita under the broiler for 1 minute on each side before adding the toppings. Carefully remove it from the oven, top as directed above, and pop it back in for a minute or two.
