  • 2 lbs. boneless, skinless chicken breasts, cut into 2 inch bite size pieces
  • 1 Tbsp avocado oil, or olive oil
  • 2 red bell peppers, seeded and sliced
  • 1 large red, or yellow onion sliced
  • 3 fresh cloves garlic, minced
  • 12 oz sliced fresh mushrooms
  • 2 tsp dry Italian seasoning
  • 1 Tbsp smoked paprika
  • 1⁄2 tsp chili flakes, or to taste
  • 2 bay leaves
  • 8 ounces crushed tomatoes
  • 2 cups chicken broth, or stock
  • sea salt and fresh ground pepper, to taste
  • a small bunch of fresh Italian parsley, chopped to garnish
