Ingredients
  • ¾ cup grated zucchini
  • 1 ¼ lbs lean ground turkey
  • ⅓ cup chopped red onion
  • 2 garlic cloves minced
  • ¼ cup wheat breadcrumbs
  • ¼ cup fresh parsley
  • 1 tbs fresh mint
  • 1tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp allspice
  • ¼ tsp chili powder
  • ¼ tsp salt
  • pepper
  • 5 cups romaine lettuce
  • 5 tbs feta cheese
  •  
  • Salad Ingredients
  • 2 ½ cups english cucumber chopped
  • 1 ½ cherry tomatoes quartered
  • ⅓ cup chopped red onion
  • 2 tbs mint
  • 2 ½ tbs lemon juice
  • 1 tbs olive oil
  • salt and pepper
Steps
  1. subheading: Salad:
  2. Combine all ingredients, Mix well  Sit for 1 hour
  3. subheading: Burgers:
  4. Squeeze any liquid out of zucchini
  5. Add to remaining ingredients (except lettuce and feta)
  6. form into 5 patties 1 inch thick
  7. cook in a skillet until cooked through
  8. serve on top of lettuce with ¾ cup of the salad, sprinkle with feta
