  • 1/2 tsp EACH Sichuan peppercorn powder, Chinese five-spice powder
  • 1 star anise optional
  • Dan Dan Sauce:
  • 1/3 cup reduced sodium chicken broth warmed
  • 1/4 cup reduced sodium soy sauce
  • 3 tablespoons Chinese sesame paste
  • 1 1/2 tablespoons rice wine or dry sherry
  • 1 tablespoon sugar
  • 1 teaspoon Sichuan peppercorn powder
  • 1/2 tsp EACH Chinese five spice powder, ground ginger
  • 2 garlic cloves minced
  • 3-4 tablespoons prepared chili oil in directions
  • Pork:
  • 1 tablespoon Vegetable oil
  • 8 ounces ground pork
  • 2 teaspoons hoisin sauce
  • 2 teaspoons rice wine or dry sherry
  • 2 teaspoons dark soy sauce may sub regular
  • 1/2 teaspoon Chinese five-spice powder
  • Sui Mi Ya Cai:
  • 1 teaspoon Vegetable oil
  • 1/2 cup sui mi ya cai see notes
  • Noodles and Greens:
  • 1 pound white fresh wheat noodles medium thickness
  • 1 bunch choy sum chopped 6-inches from the top (discard the bottoms)
  • green onions chopped
  • peanuts, chopped (toasted in skillet, recommended)
