Vegan Pumpkin Bread (Fluffy & Gluten-Free!)
Ingredients
  • 2 tbsp ground flax or ground chia seeds + 5 tbsp filtered water
  • 2 ¼ cup (215 g) quick or rolled oats, blended into a fine flour
  • 2 teaspoons baking soda (not powder)*
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup (235 g) pumpkin puree
  • ⅔ cup (103 g) coconut sugar
  • ¼ cup (65 g) nut or seed butter (I used almond)
  • Juice of ½ lemon
