Sukuma Wiki!! (Kenyan Greens) (image by epicurious)
Can be Veganized and eat with a starch once cooked (rice, potatoes, bread etc)
Ingredients
  • ½ chopped onion
  • 1 to 3 tablespoon of oil
  • 1lb of chopped beef (sub with can of beans)
  • 2 bags of frozen collard greens
  • 1 bag of frozen spinach
  • 1 can of diced tomatoes (dont drain)
  • 1 teaspoon of salt
  • 2 cloves of garlic
  • 1 cup of sour cream
Steps
  1. 1. Add oil to pan till hot then sauteed onion
  2. 2. add beef/beans sauteed
  3. 3. Add greens (collard & spinach)
  4. 4. add diced tomatoes
  5. 5. Add salt and garlic
  6. 6. Add sour cream
  7. 7. Mix everything together and let simmer
  8. Serve with starch food.
