*My Instant No-Cooking Vegan Cheese Sauce Mix by JoAnn Lakes
This is the best cheese sauce and can be batch made for instant gratification. No cooking!!! It can be made in a NutriBullet!!!! ;-) or any high-speed blender and is great for traveling!! I developed this recipe for my mother and for my traveling.

Ingredients
  • subheading: Dry Ingredients (can be premixed and stored for an instant sauce): see notes ****:
  • 1 cup instant potato flakes
  • 1 Tbsp veggie broth powder (optional)
  • ½ cup raw almond or cashew flour
  • 1 Tbsp organic cornstarch or 2 Tbsp tapioca flour
  • 3 to 4 Tbsp nutritional yeast (your preference)
  • 1 tsp garlic powder (plain or roasted)
  • 1 tsp onion powder
  • ¾ tsp paprika or smoked paprika
  • 1 good pinch turmeric, optional/purely for color
  • 1 tsp lactic acid (optional)
  • 1 tsp lemon zest (optional)
  • 3 Tbsp soymilk powder (optional)
  •  
  • subheading: Wet Ingredients:
  • 3 cups very hot but not boiling water
  • 1 Tbsp light miso (see note)
  • ¼ medium onion, cut into 4 pieces, optional (or increase onion powder to 1 Tbsp total in the dry mix)
  • ½ cup shredded carrot, optional (or 2 Tbsp carrot powder added to the dry mix)
  • ½ tsp vinegar, apple cider (if making from a pkg and traveling, the vinegar & lemon juice is optional)
  • ½ tsp lemon juice (see the note above)

  • note: 1 pinch cayenne pepper
  • note: 4 drops liquid smoke or ½ tsp chipotle powder
  • note: 1 Tbsp tomato paste or powder
  • note: 1 roasted red pepper from a jar (pat dry)
  • note: ¼ cup well-drained salsa or pico de gallo
  • note: patted dry, jarred jalapeno peppers
  • note: for mac and cheese: add 1 Tbsp prepared mustard or 1 tsp mustard powder (Colmans, preferred)
  • note: Hot sauce
Steps
  1. Place all the ingredients through the lemon zest into a bowl (or 2 cup liquid measuring cup) and stir together. See notes, ****
  2. Add the water, miso, carrot, onion, vinegar, and lemon to the blender jar. Add any of the optional items.
  3. Pour the dry ingredient mixture into the blender jar. Cover and blend away. (See note)*
Notes
  • **** This recipe can be prepackaged by adding all the dry ingredients into zip lock baggies or jar and then adding the liquid ingredients and optional ingredients, heated water, and choice of acid when you are ready to make it!!!.
  • *There are prepackage vinegar packets but vinegar is cheap, does not need refrigeration, and you can use just about any type including distilled white only (no need for lemon juice).
  • .
  • *Blend about 3 to 5 minutes. If using a NutriBullet, blend until it stops. Release the vacuum on the cover and retighten. Reset the blender and blend again. Repeat 2 or 3 more times.
  • *Refrigerate! Will thicken as it cools. Thin when using if you need a thinner sauce. Use water, broth, non-dairy milk.
  • *Cannellini beans (white kidney or great northern) can be substituted for the almond or cashew flour or in addition/part of.
  • *Okara can be added to the blender for added protein!!! I save my okara in ½ cup blocks in my freezer. Thaw before adding to the blender.
  • *Add the miso for a wonderful umami addition to the sauce

  • *****10 Delicious Ways to Use Easy Vegan Cheese Dry Mix:
  • +Add ¼ cup salsa and cilantro, if desired, for a yummy nacho dip.
  • +Cheesy soup! Add a half-cup powder to any batch of soup for a cheesy version. Broccoli or potato soup would be especially good this way.
  • +Yummy popcorn! Sprinkle dry over air-popped popcorn. If desired, spritz the popcorn with a little olive brine or pickle juice first so the cheese powder will stick.
  • +Delicious breakfast! Add a few tablespoons or so to a tofu scramble (dry mix or made cheese).
  • +Parmesan cheese substitute! Give your spaghetti a dusting of cheesy goodness.
  • +Flavored vegetables! Sprinkle over any baked, boiled, or roasted vegetable.
  • +Cheesy garlic toast! Sprinkle this over plain, buttered, or avocado toast. Add more garlic powder as necessary.
  • +Sprinkle on a hot baked potato or blend with plant-based milk for a creamy sauce for your spuds.
  • +Vegan pesto! Use this instead of dairy parmesan in any pesto recipe.
  • +Add to any biscuit or bread recipe for a delicious cheesy flavor addition.
