Seekh Kebabs with Mint Sauce

Ingredients
  • 500g/1lb 2oz mutton or lamb mince
  • 1 onion, finely chopped
  • 1 fresh green chilli, finely chopped
  • 1 whole garlic clove, peeled
  • 1cm/½in piece fresh root ginger
  • 1 free-range egg, beaten
  • 1 tsp crushed red chilli flakes
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ¼ tsp ground cinnamon
  • 1 tsp salt
  • small handful fresh coriander, chopped
  • 2 tsp vegetable oil
  • subheading: For the mint sauce:
  • 2 to 3 green chillis, chopped
  • small bunch fresh mint leaves, chopped
  • ¼ tsp salt
  • ½ tsp pomegranate powder
  • 200g/7oz plain yoghurt
