Ingredients
  • 5 cups chicken (diced cooked chicken or turkey (see page 45 for cooking methods), or diced rotisserie chicken)
  • 6 slices bacon (diced, we use turkey, but you can use any kind)
  • 1 tsp butter (optional)
  • 20 oz frozen riced cauliflower (2- (10 to 12 ounce) bags frozen riced cauliflower, see page 36)
  • 10 oz frozen large-cut seasoning blend (1- (10 to 12 ounce) bag frozen small-cut seasoning blend, optional; leave out if your kids don’t like onions)
  • ¼ cup chicken broth
  • ¾ cup mayonnaise
  • 1 cup 0% Greek yogurt
  • ¼ cup water
  • 1 tsp mineral salt
  • 1 tsp black pepper
  • 1.5 tsp onion powder
  • 1.5 tsp garlic powder
  • 2 tsp dried minced onion
  • 2 tsp parsley flakes (dried)
  • 6 oz cheddar cheese (grated or shredded)
