  • 50 gm Valrhona Jivara chocolate (see note)
  • 3 eggs
  • 125 gm caster sugar
  • 125 ml (½ cup) milk
  • Juice of 1 lemon
  • 50 gm Dutch-process cocoa, plus extra for dusting
  • 150 gm eggwhite (about 3½ eggs)
  • 200 ml pouring cream, whisked to soft peaks, refrigerated until required
