IP Bean Soup, Refried Beans, Pintos and Cheese
Ingredients
  • My bean recipe has been requested, so here goes!
  • 2 cups dried pinto beans (not soaked)
  • 1 onion, diced
  • 1 tsp Orrington seasoning (linked below)
  • 1 tsp minced garlic (you can use the jar or can mince a fresh clove)
  • 5.5 to 6 cups of your choice stock
  • note: *totally optional, but for maximum flavor, you could add either a small portion of ham (you don't even have to shred or cube ahead) or 1 tbsp of butter to finish**
  • I throw in 2 cups of dried pinto beans that have been looked over for rottens and rocks, then washed (no soaking required). I use stock (5.5 cups, but if you cook them this way and like yours a little more soupy, 6 cups works as well, just make sure you don't go over your max fill line- I have an 8qt), as I feel it makes the beans more flavorful than just water. You can use whatever stock you'd like or whatever you have on hand- homemade/store bought, beef/chicken/veggie, fat free/low sodium, etc. I use low sodium because I would rather season things myself. I also use ham broth base/seasoning (that's the pic of the brand I use and I'll link below, as some stores don't carry it). I also throw in the diced onion (no saute required beforehand) and garlic, along with the meat I have or the butter (I don't do both).
