My interpretation in a mix with an old favorite

Ingredients
  • 600g of feather blade of beef
  • 50g of plain flour, seasoned with salt and pepper
  • 2 carrots, roughly chopped
  • 1 onion, roughly chopped
  • 200g of button mushrooms
  • 200g of pancetta, cut into strips
  • 1000ml of beef stock
  • ½ tbsp of butter
  • 1 tbsp of olive oil
  •  
  • subheading: Marinade:
  • bottle red wine, full-bodied
  • 2 garlic cloves
  • 8 sprigs of fresh thyme
  • 1 bay leaf
  • ½ orange
Steps
  1. Marinade the beef overnight
  2. Brown off meat
  3. Deglaze pan with marinade
  4. Add meat and veg
  5. Slow cooker for 4 hours high or 8 hours low
  6. Instant Pot - 1 hour natural release
