Pasta E Fagioli with Sausage
Ingredients
  • 1 tablespoon extra-virgin olive oil (EVOO), plus more for drizzling
  • 1 ½ pounds sweet or hot bulk Italian sausage, or links, casings discarded
  • 1 large carrot, finely chopped
  • 2 to 3 ribs celery from the heart, finely chopped
  • 1 onion, finely chopped
  • 3 to 4 cloves garlic, finely chopped
  • 1 bay leaf
  • 2 sprigs rosemary
  • 3 to 4 sprigs thyme
  • Salt and pepper
  • 1 32 ouncecontainer  (4 cups) chicken broth
  • 1 18 ouncecan  cannellini beans
  • 1 cup ditalini pasta
  • Grated pecorino-romano or parmigiano-reggiano cheese, for serving
  • Crusty bread, for mopping
