Kale Brussel Sprout Salad
Ingredients

  • 1 cup grated Parmesan cheese
  • ½ cup dried cranberries or pomegranate seeds optional

  • ½ cup extra virgin olive oil
  • ¼ cup lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • ½ small shallot minced (about 2 tablespoons) or red onion
  • ½ teaspoon Kosher salt
  • ¼ teaspoon ground black pepper
  • subheading: For The Nuts:
  • 1 cup sliced or whole almonds or chopped walnuts or pecans
