Carrot Cake with Cream Cheese Frosting
Ingredients

  • 2 C sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 ½ t baking soda
  • 2 t baking powder
  • 2 t cinnamon
  • ½ t salt
  • 1 1⁄2 C vegetable oil
  • 2 to 3 C carrots, grated
  • ½ C pecans or walnuts, optional
  • Sue Shoaf's has 8 ½ oz can crushed pineapple also & only the 2 C carrots

  • 1⁄2 cup butter
  • 8 ounces cream cheese, room temperature
  • 2 teaspoons vanilla extract
  • 1⁄4 teaspoon salt
  • 4 cups powdered sugar (or 2)
