Butternut Squash and Pear Pottage
Ingredients
  • 1 large butternut squash (or 2 small ones, 4 to 5 lbs total weight)
  • 3 tbsp butter
  • 3 to 4 shallots, finely chopped (about ½ cup)
  • 3 to 4 ripe Bartlett pears, or Anjou, peeled, cored, and cut in ½-inch pieces
  • 2 tbsp chopped fresh ginger
  • 4 to 5 cups low-sodium chicken or vegetable broth
  • 2 tsp salt
  • ⅛ tsp cayenne pepper
  • 1 cup plus 3 tbsp heavy cream
  • Finely diced pear (optional), for garnish
  • 1 green onion (optional), rinsed and slivered, for garnish
