Healthier No-Bake Cookies
Ingredients
  • 1 cup ( 255 g) natural peanut or almond butter
  • ½ cup coconut oil
  • ½ cup ( 170 g) honey
  • 2 teaspoons vanilla extract
  • 1 cup ( 170 g) bittersweet chocolate chips
  • 2 ½ cups ( 250 g) quick cooking or old-fashioned oats (see note)
  • 3 tablespoons cocoa powder
  • 1 cup coarsely chopped almonds, toasted is optional but awesome
