Ingredients
  • ½ cup raw cashews
  • 16 ounces dried elbow macaroni , gluten-free or regular
  • 1 cup potato , peeled & chopped into 1-inch pieces
  • ½ cup carrots , chopped
  • 1 cup unsweetened soy milk (or any plant-based milk)
  • ¾ cup vegetable broth , low sodium
  • ¾ teaspoon granulated onion
  • 1 ½ teaspoons salt , more to taste
  • ½ teaspoon paprika
  • 2 to 3 tablespoons nutritional yeast , more if preferred
  • 2 ½ tablespoons tapioca flour/starch *See note
  • 2 tablespoons fresh lemon juice , more to taste
  • 2 tablespoons vegan butter
  • 2 cloves garlic , minced
