Grandmas strawberry cheesecake
Ingredients
  • subheading: Pie:
  • 8 oz cream cheese
  • ½ c sugar
  • 1tsp Vanilla
  • 1c coco whip ( I often use 1.5c)
  • subheading: Crust:
  • 8” Graham cracker, biscoff or any other crust you like).
  • subheading: Strawberry glaze:
  • 1.5 c strawberries
  • ½ c sugar
  • ½ c water
  • Dash Salt
  • 1Tbsp cornstarch with 1 Tbsp water
  • 1tsp lemon juice
  • Whole strawberries for top
Steps
  1. Boil first 4 glaze ingredients for 5 min stirring to mash up berries then drain off juice. Toss pulp ( or use in muffins etc) Put juice back in pan. Mix cornstarch with water and stir into juice, cook until thick and clear ( usually 5 min or so) remove from heat, add 1 tsp lemon juice. Cool
  2. For pie: beat sugar and cream cheese, fold in partially thawed coco whip and vanilla.
  3. Pour into prepared crust. Put whole or sliced berries on top and pour thickened glaze over.
  4. Put in fridge
Notes
  • Can use canned cherries with some almond extract in place of berry glaze
